Baked Ham & Egg Cups

Oh my goodness.  You guys?  I just found the easiest recipe – ever.  I saw the recipe on Pinterest and found the original recipe care of Frisky Lemon.

Baked Ham & Egg Cups

Ingredients (for two egg cups):

  • 2 large eggs
  • 2 slices ham
  • Salt & pepper to taste


  1. Pre-heat oven to 375.
  2. Place ham slice in muffin tin to make a cup.
  3. Crack egg into ham cup.
  4. Sprinkle with a bit of salt and pepper.
  5. Bake for 20 minutes.

Stats (per egg cup):

84 calories, 4.9g fat (2.1 saturated, 0.1 monosaturated), 222mg cholesterol, 220mg sodium, 0.6g carbs (all sugar from honey ham), 8g protein

That’s it!  I chose to top one of my cups with 1tsp of Honey BBQ sauce just to see how it would taste (delicious).  With 8g of protein per cup, it’s definitely a great grab and go breakfast low carb option.  And, if you use non-processed meat (and no BBQ sauce, obviously), it’s paleo approved!
